Smooth, chocolatey, peanut –y oats. This may sound weird, but they are REALLY good! Nice and smooth, but still having texture, they are served cold, which seemed weird at first. Refreshing, thicker than normal oatmeal, and just, different than normal oatmeal. I like overnight oats more than normal oatmeal because in the morning I can just take it out of the refrigerator and have breakfast immediately. Literally no cooking. I love to cook, but sometimes I like just having breakfast ready. Also, on hot days, they are super refreshing! They are healthy and very tasty, if you skip the chocolate chips there is no sugar! Other than the chocolate, it is not sweet which is how I like it, but if you want some sweetness you can always add some kind of sweetener. By the way, it seems like everybody uses the ‘Enjoy Life’ brand of chocolate chips. They are not very good and cost six dollars a bag! ‘Guittard’ semisweet chocolate chips are dairy free and ‘Ghiradelli” 60 percent cacao chocolate chips are both dairy free and much better! Guittard tastes more like milk chocolate and Ghiradelli tastes more like really good dark chocolate. Back to the oats, I highly recommend them because they are super filling, chock full of protein, and really delicious! Recipe slightly adapted from ‘Minimalist Baker’.
Prep Time: 5 minutes
|½ cup||Almond milk (I like unsweetened vanilla) (go a little heavy)|
|1 tablespoon||Chia seeds|
|2 ½ tablespoons||Creamy peanut butter|
|½ cup||Certified GF rolled oats|
|1-2 tablespoons||Dairy free chocolate chips|
Step 1: In a small bowl, jar, or glass, stir to combine: Almond milk, chia, and peanut butter. If the peanut butter does not stir in completely, that is fine.
Step 2: Stir in the oats and cover the container with seran wrap or a lid.
Step 3: In the morning, stir in the chocolate and enjoy! (You can put the chocolate in when making the oats, but they get a little weird and discolored.)
