Buckeye Blondies – Gluten and Dairy Free

1-IMG_20160810_130025065_HDRChewy, peanut – y, bars covered in creamy chocolate, yum! I have a recipe for Peanut Butter Brownies on my blog, so this is a sort of a switcheroo. Peanut butter base with a chocolate topping! I think peanut butter and chocolate is one of the best combinations ever! If you don’t like this mix of flavors, these are not your bars. But if you do, you will LOVE them, because they are amazing! Contrary to many of my other recipes, though, they do not seem to freeze very well. I mean, they’re still really good, but the peanut butter layer is not quite the same. If you are looking for something with peanut butter and chocolate that will freeze well, especially if you want the chocolate to be the more prominent flavor, the Peanut Butter Brownies are amazing. But these need to be eaten right away. Recipe heavily adapted from the recipe in her book, Peas and Thank you. (But it is on her blog, too) Enjoy! 🙂 By the way, it is technically vegan! My hands are getting numb, so I should probably stop typing.


Serves: 8
Prep Time: < 1 hour


¾ cup Smooth, natural peanut butter
1/3 cup Earth balance or any vegan margarine, softened considerably
¼ cup Applesauce (preferably unsweetened)
¼ cup Nondairy milk (I used almond, would have used peanut, but I don’t think it exists)
½ cup Brown sugar, very lightly packed
½ cup White sugar
½ teaspoon Pure vanilla extract
1 ¼ cup GF flour blend (I used Namaste, but anything with xantham gum works)
½ teaspoon Baking soda
1 teaspoon Baking powder
½ teaspoon Salt
2 recipes Chocolate ganache (I recommend using almond milk)


Step 1:    Preheat the oven to 350 degrees. Prepare a nine inch square baking pan by lining with foil or parchment.
Step 2:    In the bowl of a stand mixer cream together the peanut butter and Earth Balance until smooth.
Step 3:    Beat in applesauce, ‘milk’, sugars, and vanilla extract, until it is smooth and a bit fluffy.
Step 4:    In a small bowl, whisk together the GF flour, baking soda, baking powder, and salt.
Step 5:    Add the flour mixture to the peanut butter mixture and stir until well combined. The dough (it is a dough) should be thick, but a little sticky.
Step 6:    Scoop the dough into the prepared pan and bake in the preheated oven for about 20 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: When the blondies are cool, spread the ganache on the brownies and chill until firm. Slice and store in an airtight container, consume immediately.
