Crispy, chewy, and quite healthy, these granola bites are a tasty snack! I came up with this recipe all by myself when I had just finished making granola. I started throwing ingredients in a bowl until I got a dough! They turned out quite tasty, and our nine year old friend told me, ‘Zoe, these granola bites are amazing!!!’ She asked for the recipe and told me she was going to make them. I promised I would get the recipe up tonight, so here you go!
Serves: 16 – 18 bites
Prep Time: < 1 hour
|2 tablespoons||Earth Balance or vegan margarine, softened|
|1 tablespoon||Nondairy milk (I used almond)|
|½ cup||GF rolled oats|
|1/8 cup||GF oats, chopped into small pieces|
|1 tablespoon||Finely chopped pecans|
|1 tablespoon`||GF flour blend (I used Namaste)|
|½ teaspoon||Vanilla extract|
|1/8 teaspoon||Baking soda|
Step 1: Preheat the oven to 375 degrees. Prepare a small baking sheet by lining it with parchment.
Step 2: In a small bowl, beat the earth balance with a fork or whisk.
Step 3: Stir in the honey and nondairy milk.
Step 4: Add the oats, chopped oats, pecans, and GF flour. Stir until fully combined.
Step 5: Sprinkle on the vanilla, cinnamon, and baking soda. Mix until combined. Mixture will be thick, like a dough.
Step 6: Roll into small balls, about a teaspoon each. Place on the prepared baking sheet. You can pack them close together as they will not spread.
Step 7: Place in the freezer for ten to fifteen minutes, or until the balls are firm.
Step 8: Place in the preheated oven and bake for about fifteen minutes, or until crispy and firm.
Step 9: Let cool completely before enjoying. Store in an airtight container or freeze.
