Fresh Dinner Side Salad – Gluten and Dairy Free

A fresh and tasty side salad, compliments a heavier dish nicely. I thought it was a tasty combination so I wanted to share. I always love new salad ideas! The balsamic vinaigrette is really tasty; it keeps the salad tasting very fruity and fresh. Enjoy!
Serves: 4
Prep Time: 10 minutes



1 head Butter or Romaine lettuce, torn
2 cups Fresh Blueberries
1 cup Toasted pecans
1 each Small red onion, thinly sliced
1/4 cup Olive oil
1/4 cup Fruity balsamic vinegar
1 tablespoon Maple syrup or honey
½ cup Golden raisins
½ cup Grated or shredded parmesan or parmesan cheese substitute (Optional)


Step 1:    Go out to your garden; grab a ton of veggies! Put them all in the salad.
Step 2:    In a large bowl toss the lettuce, blueberries, pecans, onion, raisins, and parmesan.
Step 3:    In a separate small bowl, stir to combine: oil, balsamic vinegar, maple syrup, salt, and pepper.
Step 4:    Pour over the lettuce; toss until well combined.
Step 5:    Serve as a tasty and fresh side salad.
