Almond Butter Filled Brownies – Gluten and Dairy Free

Fudgy and rich brownies layered with creamy smooth almond butter. I decided not to add ganache because these brownies are so fudgy anyway. I think they taste pretty amazing with some coconut cream on top. I asked my mom if I could make almond butter brownies and she thought I was talking about a healthy recipe, which these are definitely not 🙂 ! They turned into my brother’s fifth birthday treat because he adored them! I got to make his birthday treat! I call that an honor! 🙂 Adapted from Gluten Free on a Shoestring


Yields: One nine inch pan
Prep Time: 15 minutes


12 tablespoons Earth balance or vegan margarine
5 ounces Unsweetened chocolate, chopped (Dairy free)
1 ounce Dark chocolate, chopped (I used 60% dark) (Dairy free)
1 cup White sugar
½ teaspoon Kosher salt
2 teaspoons Pure vanilla extract
1 cup Gluten free flour blend (I used Namaste anything with xantham should work.)
2 each Large eggs
¼ cup Any alternative milk, divided
¾ cup Smooth and natural almond butter
5 tablespoons Earth Balance or any other vegan margarine
¼ teaspoon Kosher salt
½ teaspoon Pure vanilla extract
1 cup Confectioner’s sugar / Powdered sugar
1 recipe Chocolate ganache (Optional, I didn’t use it because the brownies are so rich already)


Step 1:     Preheat the oven to 325 degrees. Grease a nine inch pan. Crisscross parchment paper in the pan and grease well.
Step 2:     In a large microwave safe bowl, combine the Earth Balance, unsweetened chocolate, and dark chocolate.
Step 3:     Microwave on high for one minute and stir. Continue microwaving at thirty second intervals until melted and smooth.
Step 4:     Add the sugar, salt and vanilla, and mix to combine well.
Step 5:     Set aside to cool. In a separate microwave safe bowl, combine almond butter, Earth Balance, ¼ teaspoon salt, vanilla, 1/8 cup alternative milk, and confectioner’s sugar.
Step 6:     Microwave the almond butter mixture for about a minute and continue stirring at twenty second intervals until smooth.
Step 7:     Add the eggs to the chocolate mixture and whisk until well combined. Stir in the 1/8 cup of alternative milk.
Step 8:     Stir in the flour until well combined.
Step 9:     Pour half of the brownie batter into the prepared pan. Pour the almond butter mixture on top and shake to flatten. Pour the rest of the brownie batter on top of the almond butter mixture.
Step 10:   Place in the preheated oven and bake until firm and mostly cooked looking, about 35 minutes.
Step 11: After cool, pour the ganache on top.
