Little miniature bars that taste like brownies and have only a few simple ingredients and no refined sugars. They are a fudgy and deep chocolate flavor with bits of almonds and seeds. The dates sweeten and hold them together, and they freeze beautifully! What’s not to like??? Recipe adapted from Sally’s Baking Addiction.
Serves: About 32 bars
Prep Time: 25 minutes
|170 grams (About 28 dates)||Pitted Medjool or Deglet Noor dates, chopped|
|1 ½ tablespoons||Vanilla extract|
|½ cup||Unsweetened cocoa powder|
|1 cup||Roasted almonds, chopped|
|1 cup||Sunflower or pumpkin seeds|
|1 tablespoon||Warm water|
|About 3 tablespoons||Cocoa powder or almond meal|
Step 1: In a small bowl, soak the dates in hot water for ten to fifteen minutes. Then drain them. In a separate bowl, soak the almonds until ready to use.
Step 2: In a blender or food processor, puree the dates and vanilla extract until smooth.
Step 3: Add the cocoa powder and blend until smooth, thick, and fudgy.
Step 4: Add the nuts, seeds, and water and blend until a thick and decadent dough forms.
Step 5: Press about one tablespoon of dough into a bar shape. Roll in the cocoa or almond meal. Repeat until all the dough is used.
