Almond Vanilla Granola (Dairy and gluten free)

This tasty granola is adapted from Fine Cooking. It is strongly almond and vanilla flavored and super crunchy! I like it with alternative milk, on top of oatmeal, or plain. My little brother and I made it together and it took us less than fifteen minutes! He announced to me that it is ‘the best granola ever!’. If you make it and change something, such as the nut butter, I would love it if you commented about how it turned out.


Yields: About nine cups of granola

6 cups Certified GF rolled oats
1 cup Chopped Walnuts
1 cup Chopped Pecans
1 cup Chopped Almonds
½ teaspoon Salt
½ teaspoon Cinnamon
¾ cup Maple syrup
2 tablespoons Neutral oil
4 tablespoons Gf flour blend (I used Namaste) (Optional)
5 tablespoons Almond Butter
1 teaspoon Vanilla extract
½ teaspoon Almond extract



Step 1:    Preheat the oven to 300 degrees. Prepare two cookie sheets by spraying them generously with oil.
Step 2:    In a large mixing bowl, combine oats, nuts, salt, and cinnamon.
Step 3:    In a small bowl or liquid measuring cup, combine maple syrup, oil, flour, almond butter, and extracts. Stir until smooth.
Step 4:    Add the syrup mixture to the oat mixture and stir until all the oats are coated.
Step 5:    Pour the mixture onto the cookie sheets and flatten it a little, but leave some clumps.
Step 6:    Put the granola into the preheated oven and bake for fifteen minutes.
Step 7:    Stir it and bake it for another fifteen minutes.

    Try adding pumpkin seeds and shredded coconut. The toasted coconut adds great flavor!

    This is delicious for breakfast or as a snack. I love how you have reduced the maple syrup. It might be fun to see if we can take it down even further as we try to reduce our sugar intake.

      The version I posted has only fifty percent of the original amount of maple syrup, and the way I have been making it lately is worth half that!

        Oops. Not worth half that. I half been using half that. ☺

    I just made it with about a cup and a half of crispy brown rice cereal and it turned out beautifully. Also, after spreading the granola out on the cookie sheet, I sprayed it with cooking oil, and then I sprayed it again after stirring halfway through. Yielded crispier golden brown granola.
