Chocolate Peanut Butter Oatmeal Cookies (Dairy and gluten free)

These incredible cookies are flourless! They are crispy and chewy at the same time and super easy to make! You cream margarine and sugar, add eggs, vanilla, and baking soda, then peanut butter, you add oats, chocolate chips, and walnuts to the creamy mixture and bake them! I found them on the back of a Trader Joe’s oats container but they are pretty heavily adapted.

Yields: About twenty cookies
Prep Time: 10 minutes
Cook time: 15 minutes

Ingredients:

¼ cup Vegan margarine (I used Earth Balance Buttery sticks)
¾ cup White sugar
¾ cup Brown sugar
2 each Eggs
1 teaspoon Vanilla extract
1 ¼ teaspoon Baking soda
1 cup Creamy, unsweetened peanut butter
3 cups Rolled oats
6 ounces Chocolate chips
½ cup Chopped walnuts

Directions:

Step 1:    Preheat the oven to 350 degrees. Line a cookie sheet with parchment.
Step 2:    In the bowl of a stand mixer cream vegan margarine and both sugars.
Step 3:    Add the eggs, vanilla, and baking soda and mix well.
Step 4:    Add the peanut butter and mix until smooth.
Step 5:    Stir in the oats, chocolate, and nuts. The dough will be thick and moist.
Step 6:    Drop cookie dough balls of about two tablespoons onto the prepared cookie sheet.
Step 7:    Bake in the preheated oven for about 15 minutes or until crispy but still soft.
