Hearty Oatmeal (Dairy and gluten free)

This oatmeal is really simple and is chock full of protein! Basically all the toppings are optional except the chia and flax, they soak up a lot of water. I think this oatmeal is a lot more filling than hot oats and water and it is easy to put together. You could probably do some sort of overnight oats by combining the ingredients and refrigerating overnight. You could eat it cold, but I am personally a big fan of hot oatmeal 🙂 !


Serves: 1
Prep Time: <10 minutes


¼  cup Oats
¾ cup Water, divided
1 tablespoon Nondairy milk or creamer (I used sweetened)
1-2 tablespoons Mixed nuts
1 teaspoon Chia seeds
1 teaspoon Flax seeds
1 tablespoon Cranberries
1 tablespoon Creamy peanut butter
½ tablespoon Chocolate chips
½ teaspoon Vanilla extract



Step 1:    Stir together the oats and a ½ cup of the water.
Step 2:    Microwave on high for three minutes.
Step 3:    Add the nondairy milk, nuts, chia, flax, cranberries, peanut butter, chocolate chips, and vanilla.
Step 4:    Add the rest of the water.
Step 5:    Microwave on high for another minute.
Step 6:    Let the oatmeal sit for two minutes, or until thick and creamy.
